Lorraine Heryet’s award-winning Sidney Slice Recipe!


Come out tomorrow to the Mary Winspear Centre at 11:00 am and enjoy the real thing while watching the Olympic Torch come through Sidney!

In April 1988 she won a prize package in Brentwood Bay and the right to call her sweet square the Sidney Slice.

Sidney Slice

Bottom layer

  • 1 1/4 cup flour
  • 1/2 cup margarine
  • 1/3 cup brown sugar

— Crumble three ingredients and pat into an 8×8 inch pan. Bake at 350 degrees for 12 minutes

Middle layer

  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/4 cup brown sugar
  • 1 teaspoon flour
  • 1/2 teaspoon baking powder
  • dash salt
  • 1 cup chopped pecans (can substitute walnuts)
  • 1/2 cup coconut

— Beat eggs and add next seven ingredients. Pour over bottom layer. Bake at 350 degrees for 30 minutes. Cool in pan and add third layer.

Top layer

  • 1/2 cup butter or margarine
  • 1 1/2 cup icing sugar
  • 1 teaspoon vanilla
  • 1 1/2 tablespoon water

— Beat all ingredients together until light and fluffy. Spread on cooled square. Melt one square of semi-sweet chocolate with one teaspoon of butter and drizzle over top. Cut into squares and chill in fridge to firm.

Recipe also good doubled and squares can be frozen.
